Hot Sauce Smoked Turkey Tabasco

Whole turkey (4-lbs., 1.8-kg.)
The Rub
¼ cup brown sugar
2 tsp. smoked paprika
1 tsp. salt
1 ½ tsp. onion powder
2 tsp. oregano
2 tsp. garlic powder
½ tsp. dried thyme
½ tsp. white pepper
½ tsp. cayenne pepper
The Glaze
½ cup ketchup
½ cup hot sauce
1 tbsp. cider vinegar
2 tsp. tabasco
½ tsp. Cajun spices
3 tbsp. unsalted butter
1. Rub the turkey with 2 tbsp. of brown sugar, smoked paprika, salt,
onion powder, garlic powder, dried thyme, white pepper, and cayenne
pepper. Let the turkey rest for an hour.
2. Plug the Traeger smoker then fill the hopper with the Traeger. Turn the
switch on.
3. Set the Traeger smoker for indirect heat then adjust the temperature to
275°F (135°C).
4. Place the seasoned turkey in the Traeger smoker and smoke for 4
5. In the meantime, place ketchup, hot sauce, cider vinegar, Tabasco, and
Cajun spices in a saucepan then bring to a simmer.
6. Remove the sauce from heat and quickly add unsalted butter to the
saucepan. Stir until melted.
7. After 4 hours of smoking, baste the Tabasco sauce over the turkey then
continue smoking for 15 minutes.
8. Once the internal temperature of the smoked turkey has reached 170°F
(77°C), remove it from the Traeger smoker and place it on a serving
